A snowy, wintry Sunday here in New York calls for the oven to be on and something comforting in the air ❄️☕️

Today I’m baking kanelkake, a classic Norwegian cinnamon cake made in true skuffekake style.

Simple, unfussy, and meant to be enjoyed with coffee, candles, and good company.

This version is of course plant-based and finished with a rich chocolate-coffee frosting that melts right into the cake… pure hverdagskos in every bite.

As we welcome 2026, I’m filled with gratitude.

To everyone who purchased my cooking classes and ebooks – tusen takk! Your support has kept Arctic Grub alive and allowed me to continue sharing Norwegian food traditions and stories with you all.

As I stand at this turning point, I’m pondering where to take Arctic Grub next. This space isn’t going anywhere – it will continue to be your home for Norwegian food, culture, and culinary heritage.

But in what form?

That’s what I’m sitting with as we enter this new year.

What I am certain about is my excitement for @nordictastebuds – a new collaboration with Jane from the popular Norwegian food blog Veganmisjonen.

Together, we’re creating an online platform with live and pre-recorded cooking classes, diving deep into Norwegian food, culture, history, and tradition.

Our mission?

Bringing back joy to the kitchen, embracing slow living, and celebrating our Nordic roots while honoring the plant-forward traditions that have always been part of our culinary heritage.

In Norway, we live for Riskrem during the holidays

In Norway, we live for Riskrem during the holidays. It’s comforting, creamy, and snowy white.

But this year, I wanted to add a little fire to the ice.

Introducing my Arctic Riskrem Brûlée.

I skipped the complicated thickeners and kept it authentic: tender rice porridge folded with whipped vegan cloud-cream.

But instead of just the usual red sauce on top, I torched a layer of sugar until it turns into deep, golden caramel.

The Secret: Since there’s no gelatin, chill the ramekins super cold before torching to keep the cream fluffy under the fire! 🔥❄️

The contrast between the cold, creamy rice and the hot, crunchy sugar is absolutely delicious! . ✨

The ovens are finally cooling down here at Arctic Grub headquarters, and as the peace of Christmas morning settles in, my heart is feeling incredibly full.

I wanted to take a moment away from the kitchen to send a massive, heartfelt THANK YOU to all of you.

Seeing you bake, comment on, and share my Christmas cookie recipes over the last few weeks has honestly been the best gift I could ask for.

You make this little corner of the internet feel so unbelievably warm, no matter the temperature outside.
