July is the season for all things fruit and berries in Norway along with most of the vegetables that are produced in the country. Think carrots, cabbage, cucumbers, cauliflower, herbs, and fresh berries…

In short: It’s the peak season for fresh produce!

In this 100% plant-based “Norvegan” cooking class, we’ll feature some of this flourishing produce as we make two delicious dishes that are sure to satisfy the savory and sweet tooth.

These dishes are light, fresh, and full of flavor.

They just might transport you right back to the Norwegian fjords!

Here’s what we’ll be cooking together:

Fiskekaker med Råkost, Agurksalat og Rømmesaus (Dillkrem)
“Fish” Cakes with Carrot Slaw, Pickled Cucumbers, and Sour Cream and Dill Sauce

Enjoying classic Norwegian fish cakes no longer requires depleting the ocean of fish—with the secret ingredient you’ll bake beautifully flaky cakes that bring the flavors of the sea.

We’ll complete the “fish” cakes with traditional sides that celebrate the produce of the season—this is summer on a plate!

Summery Raspberry Tart with Vanilla Custard

Once you master the art of making tart shells from scratch you’ll never want another store-bought one again!

In this class, I’ll guide you step-by-step as you learn how and then we’ll make a vanilla custard filled with all the familiar flavors, but without eggs and dairy!

The creamy sweet vanilla custard provides the perfect contrast to the juicy, tart raspberries which brighten up this dessert. It’s sure to bring a big smile to your face!
