Instructions
Combine non-dairy milk with lemon juice in a small bowl and set aside.
In a large bowl, combine the dry ingredients; all-purpose flour, granulated sugar, baking powder, and salt.
Add the aquafaba with the 1 tbsp granulated sugar and cream of tartar in the bowl of a stand mixer and whisk on low for 2 minutes, then medium for 2 minutes, then for the last 4-6 minutes at the highest speed. The mixture should look white and fluffy.
Preheat your waffle maker and brush with oil or melted vegan butter.
Whisk together the vanilla extract, applesauce, and vegetable oil, then pour it into the acidulated milk and combine. Make a well in the dry ingredients and pour in this wet mixture. Carefully fold in the aquafaba and let sit for a couple of minutes. Pour about 1/4 cup of waffle mixture onto the greased waffle maker and make waffles according to the waffle maker instruction.
Top with strawberry jam and vegan sour cream as I did, or fresh berries, vegan butter or you can even top it with savory foods like vegan cheese and tomatoes.
